The industrial food processing industry makes use of a broad range of dedicated sensors in order to monitor and control their processes. Generally it is preferred to have a direct measurement of the physical property of interest. In case of freezing applications this is the level-of-frozenness, indicating to which extend a product is fully frozen. For applications related to drying or food preservation this is the free water content and/or water activity, etc. Aquantis sensors allow to measure these parameters, whereas most other sensor technologies can only provide an indirect measurement as e.g. the surface and/or air-temperature in freezing applications or the environmental air humidity or sample weight during drying.
